Lemon Meringue Pie 
Even though making lemon meringue pie is an involved process, it's well worth it for this delicious dessert! 
This recipe is great, has some great tips, and you can use up some of those lemons!

We're so happy to have so much citrus at the farm store. We asked some of you your favorite things to do with lemons, especially when they are overflowing on your trees at home, and here were some of your answers

Make lemon juice ice cubes
This is such a brilliant idea! Juice your lemons and place the juice in an ice cube tray and freeze. Each cube is around  3 tb. of lemon juice that you can use whenever a recipe calls for it! So convenient !

Preserved Lemons
While this is nothing new, it's always a favorite of ours we LOVE preserved lemons and they are so easy to make! Slice the lemons into quarters but only cut about 3/4 of the way down leaving lemon attached, put a teaspoon of salt at the bottom of a pint jar and another into the quartered lemon, put in the jar and using a mortar squeeze out juice, add salt on top of the lemon, repeat the process until you can no longer fit any more lemons in the jar, fill remaining space with boiled and cooled water. Leave for 3 weeks in your fridge and then enjoy!

My grandkids love to make "Lemon Juice" AKA lemonade and I love to make lemon curd. My husband and brother in-law love lemon squares. Really...what's not to love about lemons?

Lemons! Cut into eighths to roast with chicken.
For fish, slice lemons or oranges for a bed to grill the fish on in a grilling basket. It prevents the fish from sticking or falling through. I also bake fish with citrus.

I absolutely love citrus fruits. I make citrus juice everyday in the morning for 7 days a week. Now I know Drinking citrus juice everyday can be harmful. But I just love orange juice. I recently bought a citrus electrical juicer. The juicer is a wonderful tools and can extract juice with no effort haha. I love it. thanks for sharing the information.

Fruits like grapefruit, oranges, lemons, limes, tangerines, etc., are an excellent source of vitamin C. These are essential because the human body doesn’t produce or store but needs this vitamin for proper functioning and well-being. Vitamin C promotes white blood cells and antibodies’ production that is useful to the immune system and helps fight cough and cold. Thus, consuming citrus fruits in sufficient quantities regularly is essential.

I have the most amazing lemon tree on my property. It produces these tiny lemons. I hate them going to waste so I make lemonade, then I dry the lemon peels and make potpourri out of them.
