Lemon Meringue Pie 
Even though making lemon meringue pie is an involved process, it's well worth it for this delicious dessert! 
This recipe is great, has some great tips, and you can use up some of those lemons!

We're so happy to have so much citrus at the farm store. We asked some of you your favorite things to do with lemons, especially when they are overflowing on your trees at home, and here were some of your answers

Make lemon juice ice cubes
This is such a brilliant idea! Juice your lemons and place the juice in an ice cube tray and freeze. Each cube is around  3 tb. of lemon juice that you can use whenever a recipe calls for it! So convenient !

Preserved Lemons
While this is nothing new, it's always a favorite of ours we LOVE preserved lemons and they are so easy to make! Slice the lemons into quarters but only cut about 3/4 of the way down leaving lemon attached, put a teaspoon of salt at the bottom of a pint jar and another into the quartered lemon, put in the jar and using a mortar squeeze out juice, add salt on top of the lemon, repeat the process until you can no longer fit any more lemons in the jar, fill remaining space with boiled and cooled water. Leave for 3 weeks in your fridge and then enjoy!
