Preserved Fruits and Vegetables

Eating locally allows one to truly enjoy the flavors of the seasons -- from hearty greens and citrus in the winter, to juicy peaches and zuchinni in the summer -- but it does require some sacrifice. We don't really miss the bland, watery winter tomatoes that are shipped here from across the world, but we'd be sad to exclude tomato sauces and soups from our diets entirely during the colder months.

Luckily, humans figured out methods of canning and preserving food long ago. Though these skills are all-too forgotten these days, Green String Farm sets aside much of its harvest to be processed and stored in mason jars, and savored another day. We use a commercial kitchen at Jacuzzi Winery and a number of recipes to ensure that our favorite seasonal delights are available year-round.
